Weights & Measures
One of the hardest parts about bringing our catalogue to the web was deciding how to price products. One of our core principles is fair and transparent pricing and this means that we have invested heavily in being as accurate as possible.
Pricing does change and local market pricing reflects not just the availability of products but also the willingness of customers to pay. Peak season pricing in the Cote d'Azur is far higher than in Paris or London. We work closely with local suppliers, not just at the height of the season, to ensure that our customers are as protected from these peaks as possible.
For fresh produce that requires preparation (e.g. meat & fish) we quote gross prices. This means that you are billed the cost of all the fish/meat that was used in preparing your particular fish fillet or lamb rack. It also means that you will be charged for meat that you don't receive (unless you specifically request it).
For example - fish
When you order salmon fillets, we will ask you to specify the size of the fish. Not only does this affect the size of the fillet you will receive, but it also affects that price of the fillets. Once again, you will pay per kg for the whole fish that was used to supply your particular fillets (a gross price). By the way fillets usually come in twos!
For example - meat
If french trimmed lamb racks are priced at €30 per kg, we will try and indicate that french trimming usually has a yield of 50%. Therefore, your bill will have 2kg for every 1kg that you receive. The net price of the lamb would be €60 per kg. Our skilled butchers minimise the waste to improve yields.
