What is in season?

Much of what we do is based around the availability of various different ingredients. While it is true that most things can be sourced at any time of year there are some obvious exceptions (e.g.: truffles). What is far more interesting is the benefits of using ingredients that are in season:

  • They cost less
  • They taste great
  • They don't need to travel far

When we talk to chefs, seasonality is one of the aspects of the job that can get most easily disrupted. With different homelands, different destinations and always on the move it is easy to loose touch with what is in season where.

We will be trying to help, adding seasonality information to our product pages that should give you a guide as to when is the best time to order. For example: apples in the summer will always be from last year, stone fruit in the winter are likely to have come from Australia. In Europe, cherries are harvested in June and available through July. They are fantastic and fairly priced. Winter cherries come from Australia, and are very expensive.
